Baked Eggplant

Ingredients
Mist casserole pan with Olive Oil. Layer slices of eggplant, sprinkle garlic powder, oregano, and black pepper, bits of mozzarella cheese, basil, spinach leaves and marinara sauce. Repeat layers 4 high. Top and smother with marinara sauce. Cover with foil. Bake for 40min at 375 degrees. Uncover. Bake for another 20-30 minutes at 350 degrees until eggplant is cooked all the way through.
