2 cups cooked chicken breast diced2 oz chicken broth, no msg, low sodium3 Tbs extra virgin olive oil1 cup chopped onion2 cans diced green chile peppers1 small bag frozen corn1 (28 oz) can fire roasted diced tomatoes1 - 2 Tbs Cumin
In a dutch oven heated over medium heat, add olive oil and saute onion add cumin and stir. Add remaining ingredients and bring to a boil. Lower heat and simmer for at least 1/2 hour to let the flavors meld together.
