Crock-Pot Roast and Gravy

2 lb beef roast1 onion, chopped2 stalks celery, chopped4 medium carrots, chopped1 envelope dry Lipton's Onion Soup Mixwaterflour
Place vegetables and soup mix in bottom of crock pot. Set roast on top. Pour in a couple cups of water, don't cover the roast all the way. Set crock pot to low and leave it about 8 hours.
To make gravy, pour all the liquid out of the crock pot into a saucepan. Add a flour/cold water mixture or cornstarch/cold water and simmer until it thickens.
