Ingredients
olive oilonionscelerybell peppergarlicveggie brothtomatoeschickpeaslemon juiceginger rootcumincurrycoriandersalt black pepperraisinspeanut butterfresh cilantrosweet potato (yams)
Directions
Heat olive oil in a large, nonstick saucepan over medium-high heat.
Add onions, celery, green pepper and garlic.
Cook and stir until veggies begin to soften, about 3 minutes.
Add all remaining ingredients except raisins, peanut butter and cilantro.
Brin to a boil. Reduce heat to low and simmer, covered for 20 minutes (or until sweet potato is cooked.)
Stir in raisins, peanut butter and cilantro. Mix well. Simmer 5 more minutes. Serve hot.

    When you punch in the ingredients and the amounts, it doesn't publish the amounts unless you include them in the bottom ingredients list. Otherwise, this is a great recipe! - 4/9/10

    The peanut butter is the second last item on the ingredients list. 2tbsp.

    thank you for this absolutely yummy recipe!!! My entire family enjoyed it, even my "meat and potatoes" husband. The only thing I added was grilled chicken breasts, diced, for a little more protein. We also ate it over brown rice.....yummy!! The cilantro was such a wonderful garnish, too - 1/21/13

    I did not have any idea how much of each ingredient to put in. I do not have much experience cooking to be able to estimate an amount. Of course, with these ingredients you can't really go wrong for health and flavor, so it turned out OK. - 1/3/11
