Quick and Tasty Chicken Tortilla Soup

Vegetable cooking spray1 lb. skinless, boneless, chicken breast, cut into 1-inch pieces3 1/2 cups of chicken broth1 tsp ground cumin1/2 cup of long grain brown rice1 can of whole kernel corn1 can of seasoned black beans1 can of Rotel Mexican tomatoes with cilantro and limeTortilla strips* (or use regular tortilla chips)
Spray 6 quart saucepan with cooking spray. Heat over medium heat for a minute and add the chicken. Cook until the chicken is browned, stirring frequently.
Stir in the broth, cumin and rice and bring to a boil. Reduce heat to low, cover and let simmer for 20 minutes.
Stir in corn and tomatoes and cook until rice is tender.
Garnish with tortilla strips* or tortilla chips.
* To make tortilla strips, heat oven to 425 degrees. Cut 4 tortilla into thin strips and place them on a baking sheet. Spray with cooking spray and bake for 10 minutes or until golden brown.
