Vegetarian Chili

Ingredients
1 tbsp Margarine1 large onion chopped3 cloves garlic chopped2 red peppers, diced2 stalk celery sliced3 med. carrot chopped3c sliced mushrooms28oz canned tomatoes1/2c tomato juice1 can of kidney beans1 can of black beans1/2c chopped fresh parsely2-3tbsp chili powder1 tsp cumin1 tsp oregano1/2 tsp hot pepper flakessalt and pepper to taste
Directions
Cook onion and garlic until tender. Add peppers. celery. carrots and mushrooms. Cook for 5 mins. Stir in tomatoes, tomato juice, parsley and seasonings. Cover and simmer 10-15mins. Add beans. Cook uncovered for 5-10mins.
