Garlicky Shrimp Fajitas with Guacamole

~2 garlic cloves, minced~1tsp canola oil~1-pound (I only used 12oz) peeled, cooked shrimp~salt and pepper to taste~1 avacado, mashed~2Tbsp minced shallot or onion~1tsp diced chili pepper~1 squeeze of lemon juice~4 flour tortillas
Cook minced garlic cloves in canola oil until fragrant. Reserve 1 teaspoon garlic. To the remaining garlic still in the pan, add 1 pound of peeled shrimp; sprinkle with salt and pepper, and cook until no longer pink (about 3 minutes). Mash the avacado with 2 Tbsp minced shallot or onion and the reserved garlic; adding diced chili pepper, lemon juice, and salt and pepper to taste. Spread the guacamole evenly onto the flour tortillas and top with shrimp.
