Salmon - Apricot Bake with veggies

1 lb of Salmon, chicken breast, or turkey1 cup of Sugar Free Apricot Jam (I like Smuckers)1 - 2 cups each of any veggies you like (I like onions, bells, squash, mushrooms, asparagus)
Preheat oven at 350*. Place meat in roasting pan take apricot jam and spread over meat. Add the veggies. Bake about 30 minutes until meat is done. Serve over rice or spighette squash.
Serves 4 - 6 depending on the amount of veggies.
