Breakfast Cassarole

1 lb. frozen shredded potatoes (thawed)4oz. turkey1 cup sliced mushrooms1/2 cup shredded cheddar cheese1 cup egg beaters1/8 tsp. of salt1/8 tsp. Black Pepper1/8 cup red pepper, finely chopped2 Tblsp. onion, finely chopped
Preheat oben to 350 degrees.
Coat cassarole dish with cooking spray.
Spread potatoes around the bottom and press up the sides. Place in oven for 10 min.
Mix egg, salt, pepper together.
Remove potatoes from oven and press down firmly so they are spread out over the bottom and sides. Sprinkle the sausage, red pepper and cheese in the bottom of the pan. Pour egg mixture over it.
Return pan to oven and cook until potatoes are crisp and golden and the egg mixture is set, about 25 to 30 minutes. Remove from oven and let sit about 5 minutes before serving.
