Deceptively Delicious PB and Banana Muffins

Ingredients
1 c brown sugar1/2 natural peanut butter1/2 carrot puree1/2 banana puree1 large egg white1 c flour1 tsp baking powder1 tsp baking soda1/2 tsp salt
Directions
pretheat oven to 350. line 12 muffin cups. in large bowl, mix 1/2 c brown sugar with pb, vegtable and banana purees, and egg white with wooden spoon. in a seperate bowl, mix flour, baking powder and soda and salt. add to pb mixture and stir til just combined. add remaining 1/2 brown sugar and stir once or twice more. divide batter among 12 cups. bake 15-20 minutes.
can be stores in airtight container at room temperature for up to 2 days or wrap individually and freeze for up to 1 month...

    Delicious - didn't have brown sugar so used white and the baking soda didn't get stirred in enough I think but otherwise these are great - will make another batch tomorrow with brown sugar - My 2yo ate all of his and he doesn't eat veges so I'm thrilled - 2/18/11
