Mini Quiche

Ingredients
12 large eggs beaten2 cups milk6 slices bacon cooked8 oz. swiss cheese shredded1tsp salt1/4 tsp white pepper1/4 tsp nutmeg
Directions
Preheat oven to 375
spray a cupcake pan with cooking spray or use cupcake cups to line the pan.
Prepare bacon as directed. cut into small bits.
beat eggs in mixer for 2 minutes
slowly add milk, salt, white pepper and nutmeg.
sprinkle bacon and cheese into the bottom of the cupcake cups.
Pour egg and milk mixture over cheese and bacon.
Bake for 25-30 minutes until set.
Makes 18 servings

    These were great! I was unsure about the nutmeg, but it was great, and smelled better while cooking! I added some taylor ham and bits of turkey bacon... AWESOME. - 8/10/09
