4 tbsp vegetable stock or water3 onions, chopped1 carrot, chopped1 jalapeno pepper, chopped2 cloves garlic, minced4 tsp chili powder1 tsp cumin42 oz stewed tomatoes1 tsp brown sugar30 oz kidney beans1/3 cup pearl barley
In a large sauce pan heat vegetable stock or water over medium heat. Add onions, carrot, jalepeno pepper, garlic, chili powder and cumin. Braise 5-7 mins or until carrot and onion are soft. Add tomatoes with juice and sugar. Cook 5 minutes over high heat. Stir in beans and pearl barley, reduce to low heat. Simmer the chili uncovered for 15 mins until thickened. Makes 6, 1 3/4 cup portions.
