Spicy Tofu Lo Mein

Ingredients
8 oz. lo mein noodles3/4 c. vegetable broth3 Tbsp. rice vinegar3 Tbsp. reduced-sodium soy sauce2 tsp. Sriracha chile-garlic sauce1 1/2 Tbsp. honey1 Tbsp. cornstarch4 tsp. Asian (dark) sesame oil1 (14-oz) container low-fat firm tofu, drained and cut into 1/2-inch pieces1 (16oz) bag stir-fry blend with broccoli, snowpeas, carrots, baby corn cobs, waterchest nuts, red pepers1 c. sliced fresh white mushrooms ( about 3 ounces)5 scallions, trimmed and cut into 3/4-inch pieces3 garlic cloves, minced
Directions
1. Cook the noodles according to package directions; drain and keep warm.

2. Meanwhile, stir together the broth, rice vinegar, soy sauce, Sriracha Chile-garlic sauce, honey, and cornstarch in a small bowl until smooth; set aside.

3. Heat a large nonstick skillet or wok over high heat until a drop of water sizzles. Pour in 2 teaspoons of the oil and swirl to coat the pan. Add tofu an stir-fry until lightly golden, about 4 minutes. Transfer the tofu to a bowl.

4. Heat the remaining 2 teaspoons oil in the wok. Add the stir-fry vegetables, mushrooms, scallions, and garlic; stir-fry until crisp-tender, about 4 minutes. Add the broth mixture and cook, stirring constantly, until thickened, about 1 minute. Add the reserved noodles and tofu; heat through, tossing gently, about 1 minute.

    The flavor was pretty bland, but the ease of preparation made it worth it. I added some cayenne pepper to give it some kick. (Not sure why it's called "spicy" as no spice was added.) I plan on making it again, but I'll mess around with the seasoning some. - 1/12/09

    I've never prepared tofu at home but always like it at Chinese restaurants. This was really easy to make, and at 300 calories per serving was a great dinner served with some brown rice. - 3/1/07
