Seafood Gumbo

Ingredients
1 cup flour1 cup butter2 cups diced onion4 cloves minced garlic1 cup tomato sauce1/2 cup tomato pasteWater (8 cups or so)3 lbs boneless, skinless chicken breast2 lbs cleaned shrimp2 lbs tilapia fillets
Directions
Place butter and flour in skillet and heat on high or medium high, stirring constantly, until dark reddish brown. Add onions and garlic and enough water to thin it out some so that the flour mixture does not scorch. Place this mixture in the pot with tomato sauce, paste & water and diced chicken. Bring to a boil. Season with salt, peper, red peper, and creole seasoning to taste. Add the shrimp and fish the last 20 minutes or so.
