Honey and Soy Glazed Salmon

Ingredients
2 tablespoons honey2 tablespoons low sodium soy sauce1 1/2 tablespoons lime juice2 teaspoons mustard1 tablespoon water2 teaspoons vegetable oil2 salmon filets (4 - 6 oz. each)
Directions
In a small bowl, whisk together honey, soy sauce, lime juice, mustard, and water. In a small non-stick skillet heat oil over moderately high heat until hot but not smoking and cook salmon 2 to 3 minutes on each side, or until golden and just cooked through. Transfer salmon to 2 plates. Add honey glaze to skillet and simmer, stirring, 1 minute. Pour glaze over salmon. Enjoy!

    I added some fresh garlic and ginger to the glaze. It was very good! Be sure to lightly salt and pepper your salmon before cooking it. I think I might prefer it on an orange roughie or mahi mahi next time. I guess I just prefer my salmon smoked. - 2/9/09

    Thanks for pointing that out. I changed my recipe to use low sodium soy sauce which lowered the sodium content considerably.

    The filets I use are between 4-6 oz each. :)

    This was quite yummy - I do not like fish-taste, and this recipe was good. We baked the salmon, then poured the cooked glaze over the salmon, but actually transferred the coated salmon back onto the pan to bake just a couple of minutes longer. - 9/11/08

    I made this as described above-made one change-cooked on top of the stove in a nonstick fry pan, added about 1 ts. olive oil to the pan and poured the marinade in the pan towards end of cooking. Served with brown rice, asparagus--delicous!!! - 3/19/10

    This was sooo good! I didn't have limes or lime juice so I made it with freshly squeezed lemon juice and I put 3 cloves of crushed garlic and a tbsp of minced ginger as well.It turned out awesome!I will definitely be making this again. - 4/28/09

    Very delicious!! I have been looking for a new way to make salmon and this one is super easy. I used reduced sodium soy sauce and added some minced garlic to my sauce. I undercooked my fish a bit so I could put it back in the pan with the sauce, next time Ill try it with some ginger. - 9/3/08
