Ingredients
3/4 cup of cheese2 flour tortillas8 small and thin slices of tomatoes1 cup lettuce of your choice1/2 chicken or turkey breast meat, skinless, boneless, and cooked (OPTIONAL)3 tablespoons of salsa2 or more tablespoons of Country Crock
Directions
Butter one side of both tortillas, setting one aside. Then, stick the 1st butter side down into a frying pan, at about medium heat. Next, spread out your 1/2 cup of cheese onto the tortilla shell already in the pan. Make sure the cheese isn't too close to the edges so that it doesn't melt off the edges and burn. Then, tear the chicken/turkey into little pieces and sprinkle it on top of the cheese. Next, put your remaining cheese on to the chicken, place the 2nd tortilla shell on, butter side up, and let it sizzle about 30 seconds, and flip once golden brown. Make sure your flame isn't too high, or it will burn before the cheese is melted.
While it is on the pan, get out a dinner plate and set the lettuce in a ring on the very outside. Do this with the tomatoes, too.
Once your quesidilla is golden brown, move it from the pan to your plate, so that it lies in the middle of the lettuce/tomatoes. Cut it into 8 pieces with a pizza cutter, and put salsa in the middle.
It makes 2 servings of 4 pieces each.
