Mom's Green Enchiladas

* Chicken Breast, no skin, 1 unit (yield from 1 lb ready-to-cook (remove) * Jalapeno Peppers, 1 pepper (remove) * Scallions, raw, 4 medium (4-1/8" long) (remove) * Old El Paso Green Enchilada Sauce (can), 3 serving (remove) * Cheddar or Colby Cheese, Low Fat, 1 cup, diced (remove) * La Tortilla Factory, Whole Wheat Low Carb Tortilla, 5 serving (remove)
Brown chicken breasts and shred with a fork.
Saute scallions and green peppers and then add shredded chicken.
Add one can of enchilda sauce mix and simmer for a few minutes.
Roll 1/5 of the chicken mixture into the tortilla and set in baking dish seam down.
Cover with remaining 2 cans of enchilda sauce and top with cheese
Bake for 15minute at 375
