Low Fat Poppyseed Chicken Casserole

Ingredients
1/2 cup fat free sour cream35 reduced fat Ritz Crackers, crushed1 tablespoon poppyseeds10 ounces cooked chicken breast1 can cream of chicken soup (98% fat free)
Directions
1. Mix together sour cream, cream of chicken soup, chicken, and poppyseeds. Also mix in 20 of the crushed Ritz crakers.
2. Pour into greased 8 x 8 casserole dish.
3. Sprinkle remaining Ritz cracker crumbs on top.
4. Bake at 325 for 25 minutes or until heated through.

    I love this recipe, made just a couple of changes tho to make it taste more like the origianl. I add a can of reduced fat cream of mushroom and then for the topping, I melt a stick of butter to the ritz crackers for the topping! - 9/2/08
