Lamb Burgers with Quince Jelly and Gorgonzola

1 pound ground lamb1 tsp. coriander1 tsp. cuminsalt and pepper.5 cup minced onion4 tablespoons quince jelly4 oz. blue or Gorgonzola cheese.25 cup pine nuts, toasted2 cups mixed salad greens6 hamburger rolls
Mix ground lamb with onion, spices and salt and pepper. Shape into six patties. Slide onto very hot preheated non-stick (or well-seasoned cast iron) pan. Flip after two to three minutes, then lower heat and place lid on pan to cook insides of burgers. I like mine on the medium rare side so I usually just cook for another minute or two.
Meanwhile, toast buns then spread with quince jelly and cheese. Top with cooked burgers and a little handful of greens. Enjoy with a side of salad or huge pile of steamed veggies.
