Tilapia Fish Cakes

Ingredients
4 Frozen Tilapia Fillets, defrosted and coarsely chopped2 Shallots, finely chopped2 scallions, sliced, white part of stem removed1/2 tsp of ginger pulp1 tbsp Ponzu Sauce1 tbsp Yuzu juicePepper to tasteRed Pepper flakes, optionalPanko Japanese Style Bread Crumbs
Directions
1. Mix all ingredients in a large bowl.
2. Form mixture into 2 inch balls, then flatten like a burger.
3. Dredge in Panko flour.
4. Lay pieces into a large cast iron pan with about 1/2 inch deep in safflower oil.
5. Cook until golden brown for about 5 minutes, turning once.
6. Drain oil on a paper towel before service.
