Healthy Fruity Oatmeal Cookies

Ingredients
1 cup old fashioned oats1 cup whole wheat flour1/2 cup all purpose flour1 tsp baking sodadash of salt1/2 cup chopped dried apples or apricots1 cup fresh strawberries - pureed1 TBS sugar1/2 tsp cinnamon1/2 cup granulated sugar2 egg whites1/4 cup 1% milk 1/8 cup canola oil1 TBS apple juice1/4 cup slivered almonds1/4 cup mini chocolate chipsPreheat Oven 350 degrees Use parchment lined cookie sheet or non stick.Mix pureed strawberries, 1 tbs sugar and cinnamon in a small bowl set aside.Mix oats, whole wheat flour, all purpose flour, baking soda, salt, almonds, and mini chips. Set aside.In a separate bowl, mix sugar, egg whites, milk, apple juice, and canola oil until combined. Add dry ingredients to wet ingredients. Chill batter for 15 minutes. Then use a medium scoop - about a TBS, to form cookies on baking sheet. Bake 12-15 minutes or until set. Makes approx 20 cookies
