11/4 cup quick cooking oats3/4 cup plain non fat yogurt1/2 cup orange juice11/4 cup whole wheat flour1/3 cup sugar1 tbsp baking powder1/2 tsp baking soda1 tbsp orange zest2 egg whites1 cup blueberries
Combine oats, yogurt, and orange juice in a med bowl. Set aside 5 mins. Combine flour, sugar, baking powder, baking soda and orange zest in a lg bowl. Stir to mix well. Add oat mixture and egg whites and stir just until the dry ingredients are moistened. Fold in the blueberries. Spoon into prepared muffin trays. Bake at 350 for 16 minutes. Makes 12 muffins 119 cals each.
