Jenny's Breakfast Burrito

Ingredients
1 Whole Wheat Tortilla (50 cal version)1/4 C Egg beaters or other egg substitute1 slice of onion, chopped1 slice of veggie bacon, chopped1 fat free slice of American cheese1/4 of red pepper, chopped1 T salsaspray of Pam or other non-stick cooking spray
Directions
Spray small skillet with non-stick cooking spray. When the pan is warm, throw in the onion, red pepper, and veggie bacon.

Place a tortilla on a plate. Rip American cheese in half and place pieces in the center of the tortilla, side-by-side.

Pour out 1/4 cup of egg substitute over the veggies. Scramble a bit until cooked. Scoop eggs on to tortilla. Top with salsa, fold and eat!!

If I have pinto beans, I'll add 1/4 C or less for fiber and tasty goodness.

    These are good but I think mine are better lol. I have used ham, bacon and sausage with very good results and also add a dollop of sour cream. I also use low fat cheddar. It melts so much better. - 12/28/18

    please read the ingredients more carefully before making comments. VEGGIE bacon HAS NO meat/beef/port products at all... its usually made from soy, in Australia there's a brand called Sanitarium called 'NOT BACON' made from soy not meat

    Sorry Duke! I often make this as a veggie version for my sister who has been a vegetarian for the last 19 years. I don't know what I was thinking.

    This is great and very flexible. If you do not eat pork or meat, leave it out. I used some "beef" veggie crumbles that I had in the freezer so that I would not have to go to the grocery. - 10/22/08
