Tofu Pineapple Orange Salad

Ingredients
1. 5 serving of Organic Extra Firm tofu cubes1 tbs Tofutti Better than Sour Cream1 tbs Light Mayo1/2 cup mandarin orange sections (in it's own juice)1/2 cup pineapple chunks (in it's own juice)1 tbs. pineapple juicecurry powder and salt to taste
Directions
Using spray oil in a non-stick pan, saute the tofu cubes over high heat sprinkling with curry powder and salt to taste. After browning, let cool.

Add all ingredients (plus a little more curry powder if you like) together in a bowl and toss to coat. May be served over a bed of greens or with bread or crackers. Makes 1 serving.

(I sometimes use Chinese five-spice powder instead of curry and eat this with rice/sesame crackers--yum)
