Stephanie's Eggplant Marinara Sauce

Ingredients
Tomatoes, Contadina Crushed wtih Italian Herbs, 3.25 cup (1-28 oz. can)Pasta Sauce, Wegmans Chunky Marinara, 2.5 cup (1-24 oz. jar)Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lbEVOO, Bertolli (1 tbsp)
Directions
Saute cubed eggplant in olive oil in large skillet. Once softened down, mash with potator masher for smoother consistency (optional). Add can of tomatoes and jar of sauce and bring to a simmer. Serve over angel hair pasta, with chicken if desired.
