Confetti Sausage and Rice (4 WW points)

Ingredients

1 pound smoked sausage or ground sausage2 TBSP chopped onion1/4 C chopped celery2 C hot water1 C uncooked long grain rice2/3 C frozen peas and carrots1/4 C frozen corn4 oz mushroom slices2 tsp chicken bouillon
Makes 4 servings
1. In large skillet, cook sausage until no longer pink. remove and keep warm
2. In the drippings, saute onion and celery (optional can add 1/4 C chopped peppers)
3. Stir in remaining ingredients.
4. Bring to a boil.
5. Reduce heat; cover and simmer for 15 minutes or until rice is tender
6. Return sausage to pan; heat through
