Spinach Manicotti

Ingredients
1/2 tsp salt1 egg2 cups ricotta cheese1/4 cup parmesan cheese14 tsp pepper1 1/4 cup low-fat shredded mozzarella8 oz chopped spinach (drained)2 cups marinara sauce12 manicotti shells
Directions
Cook shells as directed on package. To make filling, stir together salt, egg, ricotta, parmesan, pepper, spinach and ½ cup mozzarella. Pour 1 cup of the marinara into a shallow baking dish. Stuff shells with filling, place in dish and top with remaining sauce and cheese. Bake at 425 degrees for 12-15 minutes or until the cheese melts. One serving equals 2 shells.

    Yum! Plenty of salt in the other ingredients so I left it out of the mixture. Used fat free ricotta and reduced fat parm. Chose a reduced sodium sauce (Healthy Choice). Will definitely make this again. My husband didn't even miss the meat. ;-) Thanks for posting! - 10/2/09

    FYI - My Moosewood lowfat cookbook says you can sub whole-wheat tortillas for the noodles. It would probably add a little fiber bump too. - 1/6/12

    I made this tonight , & it was delicious! My husband isn't a big pasta guy , but he really liked it. Even my fussy 14 year old daughter liked it. She just asked me to use less Parmesan cheese next time. It was so easy. I can't wait to make it again. - 1/17/10

    Couldn't find large shells, so I used whole grain shell-shaped pasta and mixed everything. Left out the salt and egg (not stuffing anything), added a sauteed chopped onion, only used 1/2 c lowfat ricotta, used a jar of sauce. Tasted great! Will definitely make again. - 11/8/09

    I've heard of a similar recipe from my friends, but I've always wondered if taking the egg out would ruin it? Has anyone ever made this w/o the egg?
