Pad Thai Noodles

1 package dry rice noodles (roughly 227g)1 cup raw bean sprouts1 tbsp chopped red pepper5 green onions, chopped1 tsp lemon juice1 tbsp soy sauce1 tsp rice wine vinegar1/4 tsp sugar1 clove minced garlic2 tbsp chopped peanuts1 eggnonfat cooking spray
1. Soak noodles in hot water for 15-20 minutes, or until soft. Drain and set aside.
2. Coat wok with nonfat cooking spray. Heat over medium-high heat.
3. Add red pepper and garlic; saute for 1 minute. Remove from wok and set aside.
4. Place egg in wok and scramble. Add garlic and pepper mixture back to wok. Add noodles, bean sprouts, soy sauce and vinegar. Heat through.
5. Add green onion, lemon juice, sugar and peanuts. Mix well and serve.
