Diet Mountain dew chicken barbecue mini pizzas

1 4-6 oz chicken breast1.5 cups water8 TBSP Heinz One Carb Ketchup1/2 cup diet Mountain Dew1 tsp worcestershire sauce1 tsp white vinegar (optional-makes it tangier)4 white corn tortillas4 oz. mozzarella cheese, part-skim
Bring 1.5 cups water to a boil. Add chicken breast (can be frozen). Bring back to a boil, then lower heat to simmer. Simmer until chicken is cooked (if frozen, 15 min, if not, about 10). Drain water (you can keep it for soup broth!), then shred chicken breast, removing any fat or tough bits. Put chicken back in the pan and add all other ingredients. Simmer uncovered together until most liquid is absorbed/evaporated. In the meantime, lightly spray tortillas on both sides with butter flavor cooking spray. In a large heavy skillet (NO TEFLON COATED PAN!), on med/high heat, warm tortillas for about 45 seconds each side, or till tortilla is slightly crisp (you can do this in the broiler, too-just spray and put onto baking sheet under broiler for about a minute for each side-you can do several at once this way!). When toasty, add a quarter of the chicken mix onto each tortilla, and add 1 ounce of shredded mozz cheese to top. Serve as is, or broil till cheese melts and browns slightly.
