Potato Topped Chicken Casserole

Ingredients

3 cups cooked chicken cubed1 can cream of chicken soup1/2 cup diced onion1/2 cup frozen peas1 can artichoke hearts quartered1 tbsp dijon mustard1 package instant mashed potatoes (prepared)1/2 cup light mayo
Make instant potatoes according to package directions, mix in 1/2 cup light mayo. Set aside.
Combine remaining ingredients, put in small casserole dish, top with potato mixture.
Bake in 350 oven for 30 minutes or until bubbly. Put under broiler for 2-3 minutes until potatoes start to turn golden. Let sit 5-10 minutes before serving. Serves 6.
