1/2 c. oat bran1 c. whole wheat flour1/4 c. ground flaxseed1 tsp baking soda1 1/2 tsp baking powder1 tsp ground cinnamon1 tsp ground nutmeg1 large egg, beaten2 TB canola oil1/3 c. unsweetened applesauce1/4 c. sugar1/4 c. chopped pecans3 medium bananas, mashed
Makes 12 muffins
Preheat oven to 350 degrees. In a large bowl, whisk together bran, flour, flaxseed, baking soda, baking powder, cinnamon, and nutmeg. In a separate bowl, whisk together egg and oil until smooth. Stir in mashed bananas, applesauce, and sugar. Combine mixtures and fold in pecans. Spoon batter into paper-lined muffin cups or into greased muffin pan. Bake for 22 to 25 minutes or until tops spring back when lightly touched. Cool on a wire rack.
