Bok Choy Chicken Stir-Fry

2 boneless skinless chicken breasts2 Tbsp. cornstarch2 Tbsp. Teriyaki4 tsp. white vinegar1/2 tsp. red pepper flakes1 lb. Bok Choy2 tsp. peanut oil1 onion3/4 cup water1/4 cup roasted, lightly salted peanuts
Cut chicken into strips
Cut onion into slices
Combine 1 Tbsp. each cornstarch & Teriyaki in
small bowl.
Add Chicken and let stand 15 minutes
Combine remaining cornstarch, teriyaki, vinegar,
red pepper flakes and water. Set aside
Cut Bok Choy into 1" widths, separating leaves
Heat 1 tsp. oil. Add chicken and stir-fry 2 minutes.
Remove chicken from pan.
Heat remaining oil. Add onion and bok choy
stalks. Stir fry 2 minutes
Add leaves. Stir fry 1 minute longer.
Stir in chicken & Teriyaki mixture.
Cook & stir until boiled and thickened.
Remove from heat and add peanuts.
Serve
