Sweet Potato Pie

Ingredients
4 cups prepared sweet potato. You can use canned or fresh depending on your time limits.1/2 cup egg substitute 1/2 cup soy milkFrozen reduced carb pie shell (or make your own from reduced fat baking mix)Spices to taste, cinnamon, ginger, clove, etc.1 tablespoon vanilla extract
Directions
Preheat oven to 425 degrees. Combine all ingredients and pour carefully into pie shell. Be careful, it will be full. Place pie pan on larger baking sheet in case of overflow during baking. Bake for 30-40 minutes or until set and browned. Start checking at 30 minutes but don't go over 45 or crust will burn.
