Potato FLAKE Fried Chicken (Breast)

Ingredients
16 oz Chicken Breast, boneless skinless1 c Instant Mashed Potato Flakes Butter Substitute, Spray
Directions
Pre-heat oven to 350 degrees Farenheit.
Line baking sheet with foil and spray with cooking spray.
Place potato flakes in large bowl. Add whatever seasonings you'd like.
Spray each side of chicken breast with spray , then coat with potato flakes. Make sure to coat thoroughly.
Place flaked bresats on baking sheet. Sprinkle remaining flakes as desired over chicken. Spray tops with cooking spray.
Bake for about 25 minutes or until cooked through.

Makes 4 servings (4 oz chicken breast each)

    When I made this I added 1/4 c parmesan cheese & seasonings. Rinsed the chicken and rolled in flakes without using any butter. cuts some calories, sodium, cholestrol, & carbohydrates off that way. Family loved it!! - 5/2/11

    I forgot to read the part where you add spices, so the recipe was a little bland without them. I would still give it a five, but only gave four stars because my chicken came out a little soggy and not crispy. I still enjoyed it, but my husband and son didn't care for it.
