16 jumbo shrimp1 red bell pepper1 yellow bell pepper1 zucchini1 summer squash8 large mushrooms1 small red onion1 cup sweet and sour sauce1/2 cup pineapple chunks
Stack shrimp, peppers, zucchini, squash, mushrooms, and red onion onto long skewers.
Mix 1 cup sweet and sour sauce with pineapple juice reserve from can. Use to baste shrimp and veggies before, during, and after cooking.
Cook on medium until shrimp is cooked through.

I did not have mushrooms and used green pepper in place of the red pepper. My family liked this and I will most likely make it again (we used a homemade sweet and sour sauce too). I get sick of the sweet and sour sauce, but the shrimp is very tasty if you do not add extra sauce (only use in basting) - 8/31/10
