Salmon Croquets

Ingredients
One can of Honey Bee Pink Salmon1 medium or large egg17-20 Saltine crackers, crushed1 small onion, chopped
Directions
Place salmon in bowl and remove bone and skin material. Mix with egg, onion, and crushed crackers. Form into patties. Cook in a skillet with a small amount of olive oil.

Note: If your croquets don't stick together well, try adding a little bit of cornmeal to the outside. I eat these with ketchup, but there are a wide variety of sauces that will work, including honey mustard.
