Apple & Oat Bran Muffins

Ingredients
1 1/4 c whole wheat flour1 c oat bran1/3 c packed brown sugar2 1/2 tsp baking powder1/4 tsp baking soda1/4 tsp salt1/4 tsp ground nutmeg1/4 tsp ground cinnamon1 c. buttermilk2 egg whites2 TBSP cooking oil3/4 c shredded, peeled appleNonstick spray
Directions
- In medium bowl stir together flour, oat bran, brown sugar, baking powder, baking soda, salt, nutmeg & cinnamon. Set aside
- In small bowl combine buttermilk, egg whites, & oil. Add to dry ingredients & stir til just moist. Stir in shredded apple. Store batter up to 5 days in fridge if tightly covered.
- To bake, spray muffin tin with nonstick spray &spoon about 1/4 c butter into each muffin cup. Bake at 375F for 18-20 min. or til toothpick in center comes out clean.
