Bulgur Pilaf

Ingredients
Onions, 1 large, choppedGreen Bell Peppers , 1 large, chopped Canola Oil, 2 tbsp Red Ripe Tomatoes, 1 large, chopped Tomato Paste, 2 tbsBulgur, dry, 1.5 cupsSalt, 0.5 tsp Hot water, 3 cups
Directions
In a pan, pour canola oil, add onions and peppers. Saute them until they are soft.

In the meantime wash bulgur twice in cold water and drain well.

Next, add tomatoes into the pan. Saute for 2 minutes.

Add bulgur, tomato paste, salt and hot water into the pan. Cover the pan with lid. Cook slowly until bulgur is soft and all the water is absorbed.

If necesseray add more hot water.

    This is extra good and healthy. I did substitute celery for the green peppers (didn't have any on hand) and used canned tomatoes instead of fresh and the tomato sauced. Added garlic and more seasoning because we like it, but the basic recipe is fantastic and easy to make. - 2/18/21

    Wow this is really good! I substituted fresh tomatoes for a can of fire roasted tomatoes (YUM!) and didn't use the tomato paste. I added roasted minced garlic and it added another level of flavor. It is incrediable!!!! - 3/1/11
