Crusty French Rolls

1.5 C. warm water2 packages dry yeast2 T. Sugar1.5 t. Salt3 T. Melted butter5 c. All Purpose Flour3 egg whites, beaten stiff1 egg white beated with 1 T. water
Measure water into a mixing bowl. Add yeast, stirring until dissolved. Blend in sugar, 1.5 t. salt and butter. Stir in 2 cups flour until batter is smooth. Fold beaten egg whites into dough mixture. Add enough flour to form a workable dough. Turn out on floured board and knead until smooth and resilient, about 10 minutes. Put in a greased bowl, turn to grease top of dough cover with plastic wrap and a towel, and let rise until tripled (about 1.5 hours). Punch down, knead in the bowl, recover and let rise until doubled, about 1 hour. Knead lightly on a floured board, cover and let rest 10 minutes. Divide dough into 24 pieces. Place 1 portion on a floured board; cut your hand over it, and rotate quickly in a circular motion until a smooth bun is formed. Place on greased baking sheet lightly sprinkled with cornmeal. Cover and let double, about 45 minutes. Brush with egg wash. Bake in preheated 425 oven 15-20 minutes. Cool on wire rack.
