Chrissy's chicken and potato stir-fry

Ingredients

1.5 skinless chicken breast6-7 medium size new potatoes1 small can of sweet corn1 can of red kidney beans200 g of mixed vegetables (I use broccoli, carrots, baby corn and mangetouts)1 tbsp olive oilchili powder (to taste)paprika (to taste)ground thyme (to taste)salt and pepper (to taste)
1) Wash new potatoes and cook in water with a pinch of salt until soft. Drain, cut into wedges and set aside.
2) Cut chicken into small strips, rub with paprika, salt and pepper.
3) Cook mixed vegetables in hot water for about 5 minutes, drain.
3) Cook chicken in olive oil in a large pan until golden. Add potatoes, season with thyme and chili powder. Stir occasionally.
4) Drain sweet corn and kidney beans. Add mixed vegetables, sweet corn and beans to pan, heat for 3-4 minutes.
Serves two

I disagree. Think about it... it's a complete dinner - you don't need anything else with it. It's very filling and I made the servings quite big. Depending on how hungry you are you might even get 3 or 4 servings out of the recipe - it's a matter of taste really.

I cut the recipe in 4ths and still had more than enough food, plus leftovers. My husband rated it "ok". I liked the chicken and potatoes a lot, but the kidney beans I could have deleted. I added asparagus, corn, green beans, and cauliflower which is different than the recipe calls for, but good. - 3/16/09

Seems like an awful lot of food, and the nutrients are being cooked out. I agree that the canned veggies might be rinsed to lessen the sodium, and 6-7 potatoes is a lot for 2 people. Some tweaking and I bet this will be a great meal! - 3/16/09

Keep in mind they're new potatoes - they're about a third of a normal potato!
But I'd agree in retrospective that the servings should be a bit smaller than that. If you make 3-4 servings out of it it would lower the calories a whole lot as well.

Sounds pretty good although it is high in calories (just need to budget the rest of the day appropriately). I love that it's full of veggies and protein. However, the amount of sodium is scary- I would omit the salt and make sure to rinse canned veggies/use no salt added if possible. Thanks! - 3/16/09
