Chicken Salad

Ingredients
3- Boneless skinless chicken breast1/4 cup each dried cranberries and walnuts2 celery stalks1 medium slice of red onion1 Tblsp Mayo
Directions
I boil the chicken with a dash of EVOO
set aside to cool when fully cooked
dice up the celery and onion
chop the nuts and add cranberries
dice cooled fully cooked chicken
mix all in a bowl add 1 Tblsp of Mayo to bind
I like to serve on Triscuts or make lettuce wraps with but if you have a few extra calories to burn it is very yummy as filling for a grilled cheese sandwich (you will need to put the chicken salad in a food processor)
