Spinach & Feta Quiche

1 tbsp olive oil5 ounces of fresh spinach.5 medium onion, chopped3 cloves garlic, chopped5 eggs2 ounces Mozzarella, part skim4 ounces feta, reduced fat1 cup milk.5 cup water1/3 cup water
1. Preheat the oven to 375 degrees and lightly grease a 9 inch pie pan.
2. Saute the onions and garlic in the olive oil until the onions are translucent.
3. Gradually add the spinach and cook until sauteed.
4. In a bowl, combine the eggs, mozzarella, milk, water, and flour.
5. Transfer the spinach, onions, and garlic to the pie pan. Top with feta.
6. Pour the egg mixture over the spinach, onions, garlic, and feta.
7. Bake for 35-45 minutes in the oven.
