Chicken & Broccoli with peanut sauce

Ingredients
1 cup of jasmine or white rice uncooked2 boneless, skinless chicken breasts (16 oz total) cubed1/4 tsp salt1 tbsp sesame oil1 tsp vegetable oil2 tbsp smooth peanut butter1 1/2 tsp lite soy sauce2 tbsp lime juice1 cup low sodium chicken broth1 tbsp corn starch1 pkg frozen broccoli- thawed and drained
Directions
1. Cook rice according to pkg directions
2. Heat oil in a large skillet over medium heat for 2 minutes.
3. In a mixing bowl or small food processor, combine peanut butter, chicken broth, soy sauce, lime juice and the corn starch and blend.
4. Season the chicken with the salt and add to the pan.
5. Cook chicken 5 minutes or until completely cooked through and browned on all sides.
6. Add the broccoli to the pan and cook another 4-5 minutes.
7. Whisk the sauce one more time and pour over the chicken and broccoli. Allow to come to a boil and then stir for about a minute.
8. Allow the sauce to thicken. Turn down the temp and allow to simmer for about 5 -7 minutes.
9. Serve over rice.

Makes four 1 1/2 cup servings.

    Great Dish! I used chopped brocolli instead of brocolli spears, next time im going to try some fresh sugar snap peas or green beans.. Also could use a little more peanut butter - 8/17/10
