Scrambled Eggs for One

0.25 cup (not packed) Cottage Cheese, 1% Milkfat 1 large Egg, fresh, whole, raw 2 tbsp chopped Onions, raw 0.25 cup, strips Green Peppers (bell peppers) 2 tbsp Newman's Own Bandito Salsa Mild, 2 Tbsp 1 large Egg white, fresh
Beat eggs and cottage cheese together
Spray nonstick skillet with cooking spray. Cook peppers and onions on medium heat, just until tender - about 2 minutes.
Add egg mixture. Reduce heat to medium-low. Cook until set, stirring as often as needed. Top with salsa and enjoy!
1 serving (can easily be split to serve 2)
NOTE: in place of bell pepper, you can try any other veggie. I'll sometimes use julianned squash and onions in place of the bell papper.

This was fantastic! I had large curd cottage cheese & while it was cooking, I mashed it-gave it a creamy consistency (couldn't taste the cottage cheese at all). I usually like my eggs plain, but this is so good and flavorful not to mention VERY filling,this is just what I needed, thanks for sharing! - 2/26/10

The calories on this recipe seemed rather low considering it calls for 2 eggs plus cottage cheese. On checking the calories per ingredient, I found that it should be one egg only. Obviously when Sookie input the ingredients, she put ONE egg, but typed TWO in the directions. - 3/9/15

Recipe does call for 2 eggs - 1 while egg, and 1 egg white.
Ingredients and directions are listed correctly.
