Slow Cooker Lentils and Sausage

16 oz. package dry lentils1 can diced tomatoes, drained2 (14 oz) can beef broth3 cups water2 carrots, chopped1-2 stalks celery, chopped2 lbs. turkey smoked sausage1 clove garlic1 tsp oreganosalt and pepper to taste
1. Rinse and drain lentils, but do not soak. In a slow cooker, stir together all ingredients.
2. Cover and cook on High for 3 hours, or Low for 6-7 hours. Stir well before serving.

I used Hillshire Farm turkey smoked sausage (comes in 14 oz packages, so I was just a little light on meat). Cooked all ingredients but sausage on low for 6 hours, then stirred in the sausage for just the last 30 minutes or so to keep it from getting mushy. This made about ten 1.3 cup servings. - 8/12/11

This was really good! I read somewhere that the acid in the toms slows the lentil cooking process so I added the toms after two hours into the cooking process and next time I will add the Kielbasa in the last hour of cooking to increase the favor. I'm also curious what makes a serving? 2/3 cup? - 1/5/11
