3 cups diced potatoes3 cups diced mushrooms3 TBS italian seasoning3 TBS fat free sour cream1 can Fat Free Cream of Mushroom Soup1 TBS coconut oil4 oz Velveeta1 Cup White onion, chopped2 TBS flour1 cup fat free coffee creamer
Par boil potatoes for about 15 minutes, and drain. add sour cream, mushrooms, soup, onions, and seasoning to bowl with potatoes and stir well. In a sauce pan place 1 TBS coconut oil and heat until melted. Add flour and stir, slowly whisk in creamer until smooth. Add velveeta until smooth. Add to potato mixture, stir to combine.
Place in sprayed 9x13 pan, and bake in 350F preheated oven for 45 minutes or until desired doneness.
