Jean's Italian Chicken

Ingredients
1 lb chicken breast, skinned1-2 garlic cloves, minced1/2 tsp red pepper flakes 1/2 tsp parsley flakes 1 tsp olive oil4 thin slices fresh mozzerella cheesefresh roasted red pepper-a few small slices fresh basil -1/2 leaf for each piece of cheese Jarred tomato sauce-a tomato/artichoke goes very nicely.
Directions
Preheat over to 400. Spilt the chicken breast and pound out flat between wax paper. Chop up garlic, adding red pepper, parsley and olive oil. Spread mixture onto each chicken piece. Place 2 tin slices of mozzerella cheese on chicken, layer on roasted red pepper and basil. Repeat for other half. Fold/roll, secure with toothpick if needed. Place in baking dish. Spoon over 2-3 tablespoons of your favorite pasta sauce. Bake in oven for 30-40 minutes, or until chicken is cooked through.
