Two-Meat Meatloaf with Sundried Tomatoes

Ingredients
1/4 cup olive oil1 1/2 cups finely chopped onions1/2 cup finely chopped celery3 garlic cloves, minced1 teaspoon dried basil, crumbled1 teaspoon dried thyme leaves, crumbled1 teaspoon oregano, crumbled1 1/2 pounds ground turkey breast1 pound Italian-style sweet sausage (chicken), casings removed1/2 cup coursely chopped oil packed, sundried tomatoes, chopped1/2 cup finely chopped flat leaf parsley2 eggs, beaten1/2 cup fine, dry bread crumbssalt and pepper
Directions
1. In a large skillet, warm the olive oil over medium heat. Add onions, celery, garlic, basil, oregano and thyme. Cover and cook, stirring once or twice, for 10 minutes. Remove from heat and cool to room temperature.
2. Position a rack in the middle of the oven and preheat over to 350 degrees F. In a large bowl, mix together the ground turkey, sausage, the onion mixture, sun dried tomatoes, parsley, eggs, bread crumbs and salt and pepper. Mix well and transfer into a flat loaf about 2 1/2 inches thick; smooth the top of the loaf with the back of a spoon.
3. Bake about 1 1/2 hours or until an instant reading thermometer inserted in the center registers 165 degrees F. Let rest on rack for 10 minutes before slicing. Serve hot.
