Pork Teriyaki Stir Fry

1lb boneless pork cutlets .5kg1/3 cup orange juice 75mL1 1/2 tsp grated orange rind 7mL1/3 cup teriyaki sauce 75mL1 Tbsp Dijion Mustuard 15mL2tsp cornstarch 20mL2 cloves, garlic, minced 22 tsp grated ginger root 10mL1 Tbsp canola oil 15mL1 lb stir fry vegtables 500g
Mix together orange juice, rind, teriyaki sauce, mustard, cornstarch, garlic and ginger.
Heat oil in wok or deep skillet over high heat.
Stir fry pork for 2 to 3 minutes or until lightly browned.
Remove from pan.
Add vegetables to skillet.
Cover and cook 3 minutes or until thawed.
Push vegetables to sides of pan; cook, uncovered, for 1 minute or until water evaporates.
Pour juice mixture into wok.
Cook, for 1 minute or until thickened.
Return pork to pan.
Stir to coat meat and vegetables with sauce
