Spinach Rice Casserole

Ingredients
3 medium carrots, chopped (1 1/2 cups)2/3 cup chopped celery1 medium onion, chopped (1/2 cup)1 clove garlic, finely chopped1 3/4 c water1 can condensed 98% fat-free cream of mushroom soup2 boxes frozen spinach, thawed & drained1 1/2 cups brown rice, cooked1 tsp Italian seasoning1/2 tsp pepper1 cup diced cooked ham3/4 cup shredded reduced-fat Cheddar cheese1/4 cup grated Parmesan cheese
Directions
Heat oven to 350 degrees F. Spray 13 x 9 inch baking dish or pan with cooking spray.
In a 3 quart saucepan over medium heat saute carrot, celery, onion & garlic with water until soft, stirring occassionally. Add 1 3/4 cup water and cream of mushroom soup to carrot, celery, onion & garlic mixture. Stir in ham, 1/4 cup of Cheddar cheese and the Parmesan cheese. Cook 30 to 35 min. or until bubbly. Remove and sprinkle with remaining cheddar cheese. Serve when cooled slightly.
